I am beside myself with excitement about Thanksgiving. Because I love sweet potatoes. More than any sane, stable person could possibly imagine, I am wild about sweet potatoes.
This year, they will undergo the following process:
Peel, cut and boil SPs.
Mash SPs.
Add 1 eggs, a dash of milk, and a couple drops of vanilla.
Squash into a cassarole dish.
Chop pecans (or walnuts).
Mix in melted butter and brown sugar.
Spread atop the mashed SPs.
Bake at 350 until the topping bubbles a bit.
WOOO-HOOO!!!! YAY!!!!
PS-- As you bounce through the Rev Gal blogs this week, don't to comment! This is, after all, delurking week!

oh YUM!!! That's it. I am making my sw.p's like that. Beloved bearded spouse and I will LOVE them and everyone else will have to have seconds on stuffing! :)

I love sweet potatoes, too. The first year we were married I made them with great gusto as we hosted my in-laws. Ahem. Dearly beloved forgot to tell me that they didn't eat sweet potatoes. Perhaps he thought that it might have precluded the marriage. Perhaps he would have been right.
ReplyDeleteI am very familiar with sweet potatoe fever, except in my soon to be little family, it is all-year 'round. My frisbee swinging man actually likes those lovely golden tubers without the extra sweet stuff like marshmellows.
ReplyDeleteOther sweet potatoe recipies can be found at http://www.geocities.com/joncoole/main/sweetpotatoes.html.
I highly suggest the quesadillas!

ReplyDeleteI am looking forward to these tasty spuds myself. Enjoyed them the first time I had 'em, gonna enjoy them this time also!
Hello! Just participating in the delurkage. Also, you're making me hungry.
ReplyDeleteLove me some sweet taters! I eat them all year long; in burritos, in pie, just baked out of the oven! But never with marshmallows on top! Your recipe sounds like what my Mom always makes for Thanksgiving- YUM!
ReplyDeleteEnjoy!
Just stopped in to say hello. And I love sweet potatoes, too.

ReplyDeleteHappy Thanksgiving! And happy "De-Lurking Week"!
By the way -- I really appreciated the comment you left on my blog a little while ago. Thanks.

ReplyDelete...who knew there'd be such a fuss about spuds...i don't care for my p's to be sweet...
ReplyDeleteDelurking...I have to admit that I prefer winter squash to sweet potatoes. Maybe it's an Upper Midwest thing.
