I am beside myself with excitement about Thanksgiving. Because I love sweet potatoes. More than any sane, stable person could possibly imagine, I am wild about sweet potatoes.
This year, they will undergo the following process:
Peel, cut and boil SPs.
Mash SPs.
Add 1 eggs, a dash of milk, and a couple drops of vanilla.
Squash into a cassarole dish.
Chop pecans (or walnuts).
Mix in melted butter and brown sugar.
Spread atop the mashed SPs.
Bake at 350 until the topping bubbles a bit.
WOOO-HOOO!!!! YAY!!!!

I love sweet potatoes, too. The first year we were married I made them with great gusto as we hosted my in-laws. Ahem. Dearly beloved forgot to tell me that they didn't eat sweet potatoes. Perhaps he thought that it might have precluded the marriage. Perhaps he would have been right.
ReplyDeleteI am very familiar with sweet potatoe fever, except in my soon to be little family, it is all-year 'round. My frisbee swinging man actually likes those lovely golden tubers without the extra sweet stuff like marshmellows.
